Paleo Pangasius

Day 9 of my Paleo diet, and so far so good. Still feel very energized, it even seems my mood is elevated!
I don't eat meat, but do eat fish, so i was looking for a nice dinner option.
After looking around online for a bit, i decided to make Pangasius stir fry with zucchini noodles.


Ingredients:


200 grams of Pangasius
sesame oil
coconut oil
4 carrots, chopped
4 sticks of celery, chopped
1 zucchini
1/2 Madame Jeanette pepper, chopped
10 mushrooms, chopped
salt


Heat the sesame oil and coconut oil and add the carrots, pepper & celery.
After a few minutes of cooking, add the fish. Keep stirring everything every other minute or so. Last, add the mushrooms.
Meanwhile, bring water to a boil in a separate pan. Add some salt.
Use a potato peeler to slice the zucchini, or in my case, use a cheese grater to create the zucchini noodles.
For about 1 minute, cook the zucchini, then drain and rinse with cold water for a little bit.


Put the noodles on a plate, and add the stir fry on top. Enjoy!
